I Love this handy cookbook and refer to it frequently for quick, affordable, easy to make, and tasty dinner recipes. I have successfully tried over half of the recipes and plan to try many more. I really like that most of the recipes are made from items I already have in my pantry.. By adding a few extra spices & stocking up on some various staples frequently used in most of Cathy's recipes, I found I could easily make most any recipe in the book and have dinner on the table in less than an hour... total time. The actual entree takes no more than 30-40 minutes. Cathy also suggests tasty side dish options and/or tweaks her family likes. I hope to find/buy more copies of the cookbook to include in wedding/college graduation gifts. I can't think of an easier collection of recipes for a new bride, novice cooks, college students in a first time apartment, or working parents. I'm planning on giving a copy to my grandson who will be headed off to college, his first apartment, and no cooking skills other than sandwiches or pizza! He and his roommate will find lots of good, easy, and affordable meals to make quickly. Fast food and cafeteria food are only good for a short period of time. My grandson will want some "Comfort Food" before long. That's when he will want to reach for DUMP DINNERS & VOILA!! Dinner on a College Student's Dime!
Cathy Mitchell has been an interesting part of American folklore since her inception. Like the second coming of Christ she returns with by far her best novel "Quick & Easy Dump Diners". In said novel Cathy orchestrates a inspiring piece on how 250 easy and quick meals can be crafted right at home. The bible has found a rival for the most holy book of all time, and all it took was the greatest American chef & author Cathy Mitchell to do it. - J
